A easy delicous healthy snack the kids can help make and then pop in a container for while your out!
1. Put the dried fruit in a food processor and pulse till finely chopped, add boiling water & leave in processor to soak for 10 mins.
2. Add cereal, first 1/2 cup coconut, milk powder & lemon juice to bowl of the food processor. Process until a dough forms.
3. Spread remaining coconut out on a plate. Form apricot mixture into tablespoon sized balls (a great job for kids), and roll in coconut.
4.Refrigerate for a few hours, or ideally overnight. Store in fridge.
