Each month we get in the kitchen twice with our little ones at our Jr Chef Program. We create snack, lunch ideas all with the help of our little tots. This month our momstown theme was colors- Thanks to Google we made our adaption of a Fruit and Veggie muffin found HERE. We had some cooking time mistakes and I think that was based on our too moist batter so be sure to not have a super liquidy – thats a real word right ?! 😉 batter.
First thing is to make the fruit/veggie puree. Like the recipe we used steamed broccoli (about 1/2 cup), 1 medium zucchini, 1 1/2 carrots, 3/4 of an apple, 1 medium banana, and homemade applesauce about 1/2 cup. Puree all these fruits and veggies in the food processor until it resembles baby food – in total you will need approx 2 1/2 cups of puree.
We talked about what other veggies could be replaced and came up with these options:
In a seperate bowl mix the dry ingredients:
In another seperate bowl mix together all the wet ingredients:
3/4 cup Sugar
4 tbsp Butter, without salt
2 large Egg
1 tsp Vanilla extract
1/8 cup Apple Juice
1/4 cup Yogurt, Plain
2 1/2 cup Fruit and Veggie Puree
Lastly mix all 3 together until fully incorporated, bake in a preheated 375F oven for 20 minutes or until lightly brown and fully cooked. Cool and Enjoy!
