30 meals in 2 hours – this is what a goup of mamas accomplished in one afternoon all working together! Karine our momstown North Program Co-Ordinator took charge , did some prep work, got recipes in order, did all the grocery shopping and set out a plan for a mass cook out afternoon!

Recipes are all below.
1. Crock Pot Chili
2 lbs ground beef 29oz can kidney beans with liquid
29 oz can pinto beans (with liquid) 29oz can tomato sauce
1 cup diced onion 1 cup diced celery
1 large can of diced tomatoes 1 1/2 tsp black pepper
2 tsp salt 2 tbsp chili powder
1 tsp paprika 1 1/2 tsp ground cumin
2 tsp crushed garlic
When ready to serve, thaw overnight in refrigerator. Pour chili into crockpot, and cook on low 6– 8 hours. Or you can slightly defrost in the microwave, then put everything in the crockpot on high for an hour. After that, switch it back to low for the remaining cooking time.
2. Crockpot Freezer Sausage and Peppers
1 (12 oz) packages sausage (your favorite kind)
1 green peppers
½ red pepper
½ large onion
2 tsp garlic
1 can Italian diced tomatoes
1 tablespoons Italian seasoning
Slice the sausages into 1/4 inch pieces. Slice the peppers and onions lengthwise. And mince the garlic.
Put the ingredients into freezer gallon bag
Seal the bag. Lay flat and press out as much air as possible. Then double bag it to make sure it doesn’t leak and to protect it from freezer burn.
When ready to eat: Defrost the bag(s) overnight in the fridge, or simply run under cold water until you can separate it into the crockpot. Cook in your slow cooker on LOW for 6 – 8 hours. Serve over rice or noodles.
3. BBQ Pulled Pork
Cook Time: 5 hours
1c of BBQ sauce
3 lbs boneless pork shoulder or butt roast
Hand full of cut up onions
1-2 tbsp garlic
1. Cook, on HIGH for 4-5 hours.
2. Remove string from pork and use 2 forks to ‘pull’ the pork into shreds. Stir into the sauce.
3. Serve over bun, rice or noodles.
4.Sheri’s Slow Cooker Beef Stew
2-3 lbs. Stewing Beef 1pkg Onion Soup Mix
2 cans Cream of Mushroom Soup 3 chopped celery stalks
3 chopped carrots 1 cup fresh mushrooms
2 cups Frozen peas/corn/beans 1 onion diced
COOK ON LOW FOR 8 HOURS (OR HIGH FOR 4-5 HOURS)
At time of cooking you can add 2-3 diced potatoes to the stew or just serve with buns, over mashed potatoes or with a dollop of sour cream.
5.Sweet & Sour Chicken
3 large chicken breasts, cubed
1/3 cup ketchup
1/3 cup Dijon mustard
1/4 cup apple cider vinegar
1 red bell pepper, diced
1 can low sodium tomato sauce
1/4 cup sugar
1 can diced pineapple and juice
Combine all in a crock pot and cook on LOW for 6 hours or HIGH for 4 hours. Serve over rice.
2 bell peppers
3 chicken breasts
1/2 cup chicken broth
3 tbsp Fajita seasoning – recipe below
Place all the ingredients into the Crockpot and set on low for 4-6 hours.
When you are about ready to eat, I use a fork and shred up my chicken in the crockpot.
Add sour cream, cheese. lettuce and whatever other fixings your family loves and enjoy!
Serve with tortillas
1 tablespoon cornstarch 2 teaspoons chili powder
1 teaspoon salt 1 teaspoon paprika
1 teaspoon sugar 3/4 teaspoon crushed chicken bouillon cube
1/2 teaspoon onion powder 1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper 1/4 teaspoon cumin
1 Combine all ingredients in a small bowl.
2 Use as needed in recipes calling for fajita seasoning
3. Store in a mason jar and use as needed
